Twisted Gnocchi

Twisted Gnocchi

Ingredients

- 5 lbs of Yukon gold potatoes
- 1 lb of strong bakers flour
- ½ cup grated parmesan cheese
- 5 whole eggs (1 egg/ 1 lb of potato)

Directions

- Skin, boil and rice potatoes then leave to cool
- Mix all ingredients to form a stiff (and not sticky) dough – do not over work this dough as the potato will get gluey!)
- Roll and cut into gnocchi
- Poach them… when they float, they are ready!

Serve and enjoy!
