BT's Turkey Base for Soup or Sauce
Using the carcass of your Thanksgiving or Christmas turkey
place bones in a large enough pot to hold bones that are just
covered with cold water.
Bring bones to a simmer….and add
- 1 Spanish onion cut in ¼’s
- 1 carrot
- 1 stalk of celery
- 2 Bay leaves
- 10 Juniper berries
- 1 Roma tomato left whole
- 1tsp curry powder
Let stalk simmer on a low heat for 1 ½ -2 hours with
the lid off
Drain and reserve stalk discarding the bones and vegetables
. Now you have the base for any great turkey soup or sauce!
Remember that soup is eaten with a spoon and therefore anything
that you add to your soup from here on in should fit on a spoon. |
Turkey Tortellini Soup
… using 3litres of turkey stalk
- 1cup diced carrot
- 1cup sweet peas
- 1cup diced celery
- 1cup diced tomato
- as much diced turkey that you want…3cups
makes a hearty soup
- 1/2 cup chopped fresh herbs (chives, basil,
and sage)
Cook these in the stalk until tender then add
3-4 cups of cooked tortellini
- Season soup to taste and serve
This soup will be full of natural turkey flavour
and can almost be a meal all on it’s own … garnish
with a grate of Parmesan cheese and ENJOY! |
Twisted
Turkey Pasta Roll
This is the quick dish alternative for all those small pieces
of turkey that you don’t know what to do with!
Gather the following then begin!
- 6 cooked sheets of pasta
- 500mls of Ricotta cheese mixed with any herbs you wish and
a little milk or cream to let the mixture out, to make it easily
spread over pasta
- precooked left over vegetables to ie: peas, carrots, spinach
or rapinni, mushrooms
- a combination of light and dark meat turkey cut into small
pieces
- salt and fresh cracked pepper to taste

Method:
- Lay overlapping sheets of plastic wrap on
your work surface
- Lay sheets of pasta on plastic side by side
overlapping by ¾’s
of an inch (you now have a large flat surface of pasta)
- Using a palate knife spread the ricotta
mixture evenly over the pasta (take the cheese to within a ½ in.
of the edge of the pasta)
- Sprinkle the vegetables and the turkey evenly
over the cheese, then season
- You now want to roll the pasta in on itself
making something that resembles a large jelly roll…start
at one edge and begin remember to hold the plastic back so
you don’t
roll it into your dish
- Wrap the roll in plastic and place in the
fridge to set
- When baking cut a 3-4 inch piece of the
roll, remove the plastic and bake on a greased pan cut side
up in the oven at 350F for 20mins or until hot…serve
on your favorite tomato sauce…ENJOY! |
