Twisted Mint and Chive Potato Salad

Ingredients

- 4 cups sliced parboiled baby red or Yukon potatoes
- 1/2 red onion slivered
- 2 cobs of corn grilled then stripped of nibblets

Method:

Mix ingredients into a bowl and add your favorite chopped herbs toss with oil and vinegar, season and serve. On BT we used a mint vinegar and chive oil for this salad. These are simply made by using a neutral base and letting the herb steep in the oil or vinegar to release it’s flavour! Enjoy!
