Ingredients:
- 2lbs fresh live PEI mussels
- ¼ cup sweet butter (unsalted)
- ½ cup of your favorite white or rose
wine
- ½ cup finely chopped herbs

Method:
Melt butter in a pan with a lid large enough to hold all the
mussels. You can let the butter brown slightly to add a nutty
flavor to the dish. Introduce the mussels and add all of
the herbs and drizzle in the allotted wine. Place the lid
on and simmer on med-high heat on the stove, 3-4 mins. Mussels
are cooked when they just start to open. Serve open end up
in a bowl and pour the broth over the mussels.
