Twisted Rosemary Pest Lamb Chops

Ingredients:

- Pesto: yields ¾ cup strong fresh pesto

- 2 bunch fresh rosemary lightly blanched to retain color, then stripped off stems

- 2 cloves peeled garlic

- 1/4cup grated parmesan

- 1/2cup xvoo

Method:

Place rosemary, garlic and cheese in a food processor and pulse while drizzling in the olive oil. Continue blending until a smooth paste is formed.

Spread this pesto on any grilled or sautéed cuts of meat, while cooking. Wonderful on lamb and tender cuts of beef.
