Part #1 ~ Asparagus stock Essentially, this is an asparagus tea using trimmings of the
asparagus.
Cover with twice the volume of cold water and a
tbsp. of sugar.
Bring to a boil, then remove from heat and let cool to room
temperature.
Puree and pass through a sieve. Retain the green asparagus flavored tea to build your soup. |
Part #2 ~ Asparagus soup 1 onion finely diced 2 tbsp sweet butter (unsalted) 2 tbsp brown sugar Sweat these off in a deep pot to release their
flavor. Introduce 1 liter 35% cream and let simmer
to reduce by half the volume Introduce 2 bunch blanched asparagus, and 4
cups asparagus stock Bring to a boil, puree and season to taste
with a little salt and nutmeg.
Serve and garnish with something you enjoy! |
